I wanted to make a treat for my nieces and nephew and thought I would try a “Rocky Road”. It’s not a treat I would consider to get myself but I think I have well and truly changed my mind on that one now after making these. I really don’t think you can go wrong with them and there are so many different flavours to try ….
Rocky Roads are typically milk chocolate, marshmallow, biscuits, nuts or dried fruit but I know not everyone likes those flavours. I have seen so many recipes online and the Rolo and Mint Aero’s recipes got my attention and thought I need to makes these. Then decide which one I like best, I mean get my nieces and nephew’s to try and let me know which ones they like best 🙂
There can be so many different variations of this … do you use milk or dark chocolate? or Digestive or Rich Tea biscuits. I guess you can change it to suit your own preference. I opted for milk chocolate and digestive biscuits… for the the Rolo Rocky Road and a combination of dark and milk chocolate for the Mint Aero version. However I might try another variation… it’s just a good excuse to make them again 🙂 Research purposes obviously!!!


Recipe instructions.
- Prepare the baking tray with greaseproof paper, making sure that the paper is quite high at the sides of the tin as it will be easier to lift the mixture out once it’s dried. Put the tin to one side until required.
- First boil the kettle… need to get some hot water ready for melting the chocolate and butter. Measure out the ingredients using the kitchen scales. Put the chocolate and butter in a large glass bowl. Pour the boiled water into a pot and place the glass bowl over the water. Put a gentle heat under the water and watch the chocolate and butter melt. Once melted add the golden syrup. Mix together and it should just look like a delicious chocolate mixture!! It should be quite hot so you want to put it to the side to cool down.
- Break up the digestive biscuits into small pieces and put in a bowl add in the the marshmallows and Rolo’s. Keep some of the Marshmallows and Rolo’s aside for the topping.
- The chocolate mix should have cooled by now, pour the mixture over the biscuits and marshmallows and Rolo’s give it a stir and quickly transfer the mix into the baking tray. (some of the marshmallows will melt so don’t worry but you need to be quick to mix the ingredients and be quick with the next step).
- Top the mixture with the remainder of the marshmallows and Rolo’s and put in the fridge to chill for a couple of hours. (I was a bit sparse with the marshmallows and Rolo’s the last time for the topping so throw as much of the marshmallows and Rolo’s as you want on top).
- Take out the fridge and cut into square… and enjoy. 🙂
- Repeat the instructions above and swap the Rolo’s for the Mint Aero Bubbles… I can’t decide which one is best… 🙂
